docs: credit @orenyomtov for the SN-2026-011 report
Add Oren Yomtov (github.com/orenyomtov) to the contributor wall in README.md, README_ZH.md, and CONTRIBUTORS.md, and to the Issue reports table, for the private disclosure of the unsigned-header CopyObject cross-object read fixed as SN-2026-011 (#173).
